- Winemaking: A cold pre-fermentation maceration is carried out for 4 to 5 days. This is followed by traditional fermentation in stainless steel tanks, with the addition of selected yeasts and strict temperature control. This fermentation lasts between 15 and 20 days, and once complete, optimal conditions are created to allow malolactic fermentation to occur spontaneously.
Aging then begins to develop the wine's smooth character, primarily in French oak barrels and to a lesser extent in stainless steel tanks.
